Broad bean mash

SERVES 4 PREP + COOK TIME 30 MIN­UTES

Shell 1kg fresh broad beans, dis­card pods. Boil, steam or mi­crowave beans

un­til just ten­der; drain. Peel away grey-coloured outer shells; blend or process beans un­til smooth. Stir in

2 ta­ble­spoons hot cream. Boil, steam or

mi­crowave 1kg coarsely chopped

pota­toes un­til ten­der; drain. Mash potato in large bowl; stir in pro­cessed

bean mix­ture, 40g but­ter and 2 ta­ble­spoons hot cream.
