Ap­ple and rasp­berry crum­bles

SERVES 4 PREP + COOK TIME 35 MIN­UTES

4 medium green ap­ples, chopped coarsely 2 tea­spoons finely grated lemon rind

¼ cup lemon juice

¼ cup firmly packed light brown sugar 2 tea­spoons mixed spice

2 ta­ble­spoons wa­ter

500g frozen rasp­ber­ries

125g crum­bled Scotch fin­ger bis­cuits

1 Pre­heat oven to 220°C. Cook ap­ple, lemon rind, lemon juice and light brown sugar in large fry­ing pan un­til ap­ple be­gins to caramelise.

2 Stir in mixed spice, wa­ter and the frozen rasp­ber­ries.

3 Di­vide mix­ture into four 1-cup (250ml) shal­low oven­proof dishes; top with crum­bled Scotch fin­ger bis­cuits.

4 Place dishes on oven tray. Bake crum­bles about 10 min­utes or un­til top­ping is browned.
