Apple and raspberry crumbles
SERVES 4 PREP + COOK TIME 35 MINUTES
4 medium green apples, chopped coarsely 2 teaspoons finely grated lemon rind
¼ cup lemon juice
¼ cup firmly packed light brown sugar 2 teaspoons mixed spice
2 tablespoons water
500g frozen raspberries
125g crumbled Scotch finger biscuits
1 Preheat oven to 220°C. Cook apple, lemon rind, lemon juice and light brown sugar in large frying pan until apple begins to caramelise.
2 Stir in mixed spice, water and the frozen raspberries.
3 Divide mixture into four 1-cup (250ml) shallow ovenproof dishes; top with crumbled Scotch finger biscuits.
4 Place dishes on oven tray. Bake crumbles about 10 minutes or until topping is browned.
