Spinach parme­san bites

MAKES 36 PREP TIME 15 MIN­UTES COOK TIME 15 MIN­UTES A great way to eat your greens – and chil­dren also re­ally en­joy them. Al­ways a great veg­etable side dish, and they make a wel­come gift of food for some­one in need. 50g but­ter ½ cup boil­ing water 2 cups fresh brown bread­crumbs, made from fresh bread slices whizzed in the food pro­ces­sor 500g frozen cooked spinach, chopped (can be de­frosted frozen spinach cubes) 2 eggs ½ cup grated parme­san 1 Pre­heat oven to 180°C. Cover a bak­ing tray with bak­ing pa­per and spray the pa­per with non-stick bak­ing spray. 2 In a large bowl, melt the but­ter in the hot water. Add the re­main­ing in­gre­di­ents and mix it all to­gether. With wet hands, form the mix­ture into small 3cm balls. Place on the pre­pared tray. Bake for 12–15 min­utes. They should be firm and lightly golden. Per­fectly nice at room tem­per­a­ture or hot from the oven.
