Spinach parmesan bites

MAKES 36 PREP TIME 15 MINUTES COOK TIME 15 MINUTES A great way to eat your greens – and children also really enjoy them. Always a great vegetable side dish, and they make a welcome gift of food for someone in need. 50g butter ½ cup boiling water 2 cups fresh brown breadcrumb­s, made from fresh bread slices whizzed in the food processor 500g frozen cooked spinach, chopped (can be defrosted frozen spinach cubes) 2 eggs ½ cup grated parmesan 1 Preheat oven to 180°C. Cover a baking tray with baking paper and spray the paper with non-stick baking spray. 2 In a large bowl, melt the butter in the hot water. Add the remaining ingredient­s and mix it all together. With wet hands, form the mixture into small 3cm balls. Place on the prepared tray. Bake for 12–15 minutes. They should be firm and lightly golden. Perfectly nice at room temperatur­e or hot from the oven.
