EQUIP­MENT

30cm round cake board or cake stand

CAKE

1½ x 453g tubs vanilla frost­ing blue gel food colour­ing 2 x 460g pack­aged dou­ble un­filled sponge cake rounds

DEC­O­RA­TIONS

rain­bow star con­fetti/sprin­kles 1 rain­bow sour strap 3 Tang­fas­tic marsh­mal­lows or sim­i­lar large marsh­mal­lows, halved 1 white marsh­mal­low, halved 8 mini white marsh­mal­lows, halved 1 Tint frost­ing blue. Sand­wich three cakes to­gether us­ing a lit­tle frost­ing (dis­card or keep the re­main­ing round for an­other use), then se­cure cake to cake board or cake stand with a lit­tle more frost­ing. Spread re­main­ing frost­ing over top and side of cake. Push rain­bow con­fetti onto side of cake. 2 Us­ing pic­ture as a guide, push each end of sour strap into frost­ing. Ar­range marsh­mal­lows on ei­ther side of rain­bow in cloud clus­ters.

Skate­board ramp

EQUIP­MENT

20cm x 35cm rec­tan­gu­lar cake board

CAKE

2 x 453g tubs vanilla frost­ing yel­low food colour­ing 2 x 450g pack­aged dou­ble un­filled sponge cake slabs

DEC­O­RA­TIONS

2 x 120g pack­ets black licorice straps 2 x 240g pack­ets licorice all­sorts 16 thick ice-cream wafers 4 fizzers or Al­lens Sweets Red Skins 16 as­sorted coloured mini M&M’s 1 Tint frost­ing yel­low. Cut one cake slab in half cross­ways; se­cure 1½ cake slabs, short sides to­gether, on the cake board with a lit­tle frost­ing to cre­ate a long rect­an­gle. Halve whole slabs cross­ways and po­si­tion up­right on cake at each end to make ramp walls; se­cure with a lit­tle frost­ing. Cut re­main­ing cake piece in half and se­cure to the in­side of the cake ‘walls’ to make two shorter ‘walls’. Us­ing a ser­rated knife, cut a rounded ramp shape from cake, leav­ing a 3cm edge on ei­ther side for ramp walls. Re­serve any cake trim­mings and place over the base of the ramp to build it up a lit­tle. 2 Spread frost­ing all over cake us­ing gen­er­ous amounts over the base and up the sides of the walls to make the rounded ramp shape. 3 Us­ing pic­ture as a guide, mea­sure and trim licorice straps to cover in­side sur­face of ramp; ar­range side by side, press­ing gen­tly into frost­ing to se­cure, then place 2 pieces across the top to fin­ish. Slice licorice all­sorts into in­di­vid­ual coloured tiles. Press tiles in a che­quered pat­tern along both sides of ramp. 4 Trim and press wafers for ‘safety fence’ on out­side and across the top of the cake. Us­ing scis­sors, trim ends of each Fizzer into a rounded edge to cre­ate a skate­board. Press M&M’s into sides of boards. Po­si­tion skate­boards on ramp.
