A tagine is a con­i­cal-shaped cook­ing ves­sel. Some are suit­able for brown­ing over high tem­per­a­tures, others are for low tem­per­a­tures and others are only dec­o­ra­tive serv­ing dishes. If a tagine is not avail­able, a large deep fry­ing pan with a lid or tented foil over the top will work.
