Pick Brus­sels sprouts from the bot­tom of the stem up.

• To har­vest sil­ver­beet and spinach, twist and pull off the largest outer stalks, let­ting the smaller in­ner ones grow. Don’t use a knife as the cut ends of the stems will rot. Ditto cel­ery.

• Asian greens such as bok choy, kai laan and shungiku are cold-hardy and quick to crop, ma­tur­ing from seed in as lit­tle as 55 days.
