Spi­der­web bis­cuits

MAKES 24 PREP AND COOK TIME 1 HOUR 15 MIN­UTES

2 egg whites 2¼ cups (360g) pure ic­ing sugar, sifted elec­tric or­ange, elec­tric green and black gel food colour­ings plain round sweet bis­cuits

1 Beat egg whites in a small bowl with an elec­tric mixer un­til just frothy. Grad­u­ally add ic­ing sugar, beat­ing un­til com­bined be­tween ad­di­tions and soft peaks form. Di­vide ic­ing into three equal por­tions. Tint one por­tion with elec­tric or­ange food colour­ing, one with elec­tric green food colour­ing and one with black food colour­ing. Spoon the ic­ings into three small pip­ing bags. 2 Pipe a line around the out­side of half of the bis­cuits with or­ange ic­ing, then fill in the in­side to cover. Smooth with a small spat­ula or the back of a spoon. Re­peat with re­main­ing bis­cuits and the green ic­ing. 3 Pipe cir­cles of black ic­ing over coloured ic­ings. Us­ing tooth­picks, draw lines from cen­tre of bis­cuit to out­side to cre­ate a spi­der­web. Re­peat with re­main­ing bis­cuits and ic­ings in batches. Stand bis­cuits on a wire rack un­til ic­ing is set. Suit­able to freeze.
