Three Grain Fried Rice with Citrus Miso Dressing
PREP TIME 5 MINS COOKING TIME 8-10 MINS SERVES 2
• Large heavy based fry-pan or wok • Medium glass bowl • Whisk • Chopping board, knifes, tongs, wooden spoons • Serving dish
1 Tbsp vegetable oil 1 cup diced Swiss brown mushrooms 1 cup green beans, finely sliced lengthways ½ cup chopped bok choy 1 x 250g packet UNCLE BEN’S ® Rice Medley ¼ cup sliced spring onion 1 small red chilli, thinly sliced
Heat oil in a large non-stick frying pan or wok over a medium-high heat. Add mushrooms and sauté for 2 minutes. Add beans, bok choy and rice. Pour over citrus miso dressing and cook for a further 3-4 minutes, stirring frequently. Divide between 2 bowls, top with chilli and spring onion, and serve immediately.
Citrus miso dressing
1 Tbsp finely grated fresh ginger 2 Tbsp reduced salt soy sauce 3 Tbsp orange juice 1 Tbsp miso paste 1 Tbsp sesame seeds pinch salt
Combine all ingredients in a small bowl or jar and whisk until miso is fully incorporated.
