Three Grain Fried Rice with Citrus Miso Dress­ing

Equip­ment

• Large heavy based fry-pan or wok • Medium glass bowl • Whisk • Chop­ping board, knifes, tongs, wooden spoons • Serv­ing dish

1 Tbsp veg­etable oil 1 cup diced Swiss brown mush­rooms 1 cup green beans, finely sliced length­ways ½ cup chopped bok choy 1 x 250g packet UN­CLE BEN’S ® Rice Med­ley ¼ cup sliced spring onion 1 small red chilli, thinly sliced

Heat oil in a large non-stick fry­ing pan or wok over a medium-high heat. Add mush­rooms and sauté for 2 min­utes. Add beans, bok choy and rice. Pour over citrus miso dress­ing and cook for a fur­ther 3-4 min­utes, stir­ring fre­quently. Di­vide be­tween 2 bowls, top with chilli and spring onion, and serve im­me­di­ately.

Citrus miso dress­ing

1 Tbsp finely grated fresh gin­ger 2 Tbsp re­duced salt soy sauce 3 Tbsp or­ange juice 1 Tbsp miso paste 1 Tbsp sesame seeds pinch salt

Com­bine all in­gre­di­ents in a small bowl or jar and whisk un­til miso is fully in­cor­po­rated.
