A re­cent spate of cases of scurvy in Australia is a re­minder of the im­por­tance of vi­ta­min C. The dis­ease is a re­sult of chronic vi­ta­min C de­fi­ciency and poor diet, par­tic­u­larly in peo­ple who eat few fresh fruits (es­pe­cially cit­rus) and veg­eta­bles, or who over­cook veg­eta­bles – over­cook­ing de­stroys vi­ta­min C. Scurvy can lead to poor wound heal­ing, joint pain, bruis­ing, scaly skin and swollen, bleed­ing gums.
