MAKES 10-12 BIG SCONES
3 cups self-raising flour ½ teaspoon salt 50 g butter approximately 1 cup milk
1 Preheat oven to 200°C. Line an oven tray with baking paper.
2 Place flour and salt in a large bowl. Warm butter and milk, stirring until the butter has fully melted. Pour into the flour and mix to a soft dough, adding extra cold milk if required.
3 Tip dough out onto a floured board and press flat into a 3cm-thick slab. Cut out squares and place close to each other on the prepared tray. Brush with milk and bake for 15-20 minutes. Cool on a wire rack, covered with a clean tea towel.
