You can re­place fresh rasp­ber­ries with ex­tra frozen rasp­ber­ries, fresh straw­ber­ries or pome­gran­ate seeds. If you don’t have the time to make ice-cream from scratch and want a short cut, fold the rasp­berry purée through 1.5 litres of slightly soft­ened good-qual­ity vanilla ice-cream.
