Health ex­perts be­lieve you are re­mov­ing the health­i­est part of a veg­etable when you peel it. The ma­jor­ity of veg­eta­bles’ nu­tri­ents are ac­tu­ally within the skin and con­tain an­tiox­i­dants that fight against free rad­i­cals (groups of atoms that cause dam­age to the body, such as heart disease, when pro­duced in ex­cess). For ex­am­ple, cu­cum­ber skin con­tains most of its an­tiox­i­dants and vi­ta­min K, while potato skin con­tains more iron, cal­cium, potas­sium, vi­ta­min B6 and vi­ta­min C than the rest of the potato.
