Ask your butcher to score the pork rind for you as it is dif­fi­cult to do with­out a sharp Stan­ley knife. Crush the fen­nel seeds in a mor­tar and pes­tle. Oth­er­wise, you can chop them with a knife. Other good pork cuts for roast­ing are a leg roast, bone­less rolled loin, loin rack, belly, spare ribs, fore­quar­ter roast, shoul­der and Scotch fil­let (neck) roast.
