En­sure that the pan you are us­ing is dry, be­fore fill­ing it one-third full with oil. The gen­eral tem­per­a­ture for fry­ing is 180°C. You can use a cook­ing ther­mome­ter to gauge the tem­per­a­ture, or drop a cube of bread into to the oil; it should siz­zle rapidly and start to brown.
