Bring a medium-sized pot of wa­ter to the boil with a pinch of salt. Add po­ta­toes un­til nearly cooked, around 10 min­utes. Drain wa­ter and put aside. Heat olive oil in a large fry­ing pan. Add onion and gar­lic and cook over medium heat un­til soft. Add as­para­gus, cap­sicum and po­ta­toes, turn up heat and cook un­til po­ta­toes are crisped and brown.

Add mush­rooms, pep­per and more oil if needed. Stir-fry un­til cooked through, about 10 min­utes. Serve topped with a fried or poached egg. Sprin­kle pep­per and pars­ley.

• 1 Tbsp oil

• red onion, finely chopped

• 1 cup but­ton mush­rooms, wiped and thinly sliced

• 6 large eggs

• cup milk

• 1 cup baby spinach, roughly chopped

• cup cherry to­ma­toes, quar­tered
