Beef and lamb to give away


Six Queen­stown, Wanaka and Cen­tral Otago restau­rants are among a record num­ber of en­tries com­pet­ing in the 2016 Sil­ver Fern Farms Premier Se­lec­tion Awards this year.

Pitches Cafe´ & Restau­rant, in Ophir, is look­ing to de­fend its ti­tle as best re­gional restau­rant earned last year with a dish of eye fil­let, beef cheeks and bone mar­row.

Carrick is hop­ing for third time lucky af­ter be­ing a fi­nal­ist the pre­vi­ous two years. The chef has cre­ated a duo of lamb - slow braised neck fil­let, thyme roasted loin with spring veg­eta­bles.

The Wakatipu Grill was also a fi­nal­ist last year and this year has veni­son loin and veni­son cheek dish.

Wanaka Bistro Gen­til has a steak and onion dish fea­tur­ing eye fil­let, onion caramel, tem­pura shal­lots, smoked shal­lot puree, red onion rel­ish, herb oil and black gar­lic jus.

Kika has cre­ated 72 Hour sous vide - beef belly fin­ished with Kombu brown but­ter, charred leek white, pureed leek greens, co­latura di Alici aioli and cabernet gel.

The Land­ing chefs have a beef shoul­der ten­der, zuc­chini bread, bone mar­row cro­quette, fer­mented to­mato and horse­rad­ish cream.

The 73 en­tries from top chefs across New Zealand this year are avail­able at restau­rants from Septem­ber 28 to Novem­ber 6 and will be judged by ex­perts over the same pe­riod.
