When plan­ning a day’s out­ing from Christchurch, you’d be hard pressed to pick a bet­ter venue than Pe­ga­sus Bay in the Waipara Val­ley. While the in­te­rior has the feel of a coun­try house, with its solid wooden ta­bles and fram­ing, out­side the clev­erly par­ti­tioned hedg­ing pro­vides shel­ter from the wind as well as cre­at­ing in­ti­mate din­ing pock­ets, so you feel as if a lit­tle piece of the gar­den is all yours. Chef Teresa Pert makes the kind of food you’ll wish you could eat ev­ery day, com­bin­ing top-notch tech­nique with a ca­sual, un­fussy style. A sub­lime pork head bal­lo­tine is paired with per­fectly poached quince and crispy, mor­eish pig’s ears, while the ex­pertly roasted, crisp-skinned mar­ket fish sings along­side a de­li­cious pea and fen­nel salad and lemon puree.
