The Larder’s hum­ble sur­rounds in sub­ur­ban Mi­ra­mar be­lie the ut­ter com­mit­ment of own­ers Ja­cob Brown and Sarah Bul­lock (above) to in­no­va­tive food, the very best wine and at­ten­tive ser­vice. Their ded­i­ca­tion knows no bounds – how many other chefs hunt for rare mush­rooms while run­ning in Welling­ton’s town belt be­tween shifts? How many other maitre d’s en­cour­age their chil­dren to pick ox­alis from the gar­den to gar­nish restau­rant desserts? Brown is known for his use of in­ter­est­ing meat and of­fal, as in a stun­ning dish of spice-crusted fil­let of South Island elk and creamy caramelised sweet­breads on a bed of kale, with pick­led rasp­ber­ries, baby onions and beet­root crisps com­plet­ing the pic­ture.
