Pass­ing through the bistro and bar area into Chillingworth Road’s fine-din­ing room is a bit like en­ter­ing an­other world – it’s a dra­matic, win­dow­less space with dark walls and chan­de­liers, the right set­ting for chef Dar­ren Wright’s in­tri­cate, beau­ti­ful food. Of­fer­ing five-, seven- or nine-course tast­ing menus, Chillingworth Road is big on lo­cal, sus­tain­able in­gre­di­ents, and trans­parency in ev­ery step from pad­dock to plate. An amuse bouche of rich, beau­ti­fully sea­soned cele­riac soup with smoked eel is sen­sa­tional, while per­fectly cooked pork belly pairs well with smooth, creamy cau­li­flower puree, a cau­li­flower beignet and seared scal­lop.
