Restaurant ho­tels can of­ten be soul­less and dreary af­fairs, but Gusto is the an­tithe­sis of that. Mar­ble sur­faces and dark wood ex­ude com­fort and style. Sean Con­nolly is at the helm but the team be­hind him know their stuff too. Pasta and risotti here are al­ways a high­light – think pap­pardelle with duck and pea ragu or Cloudy Bay clams with spaghetti. The meat and fish dishes are well ex­e­cuted, but don’t ne­glect the veg­eta­bles. A dish of bar­ley, broc­coli, chilli, lemon and an­chovy is ex­cel­lent, as is the eg­g­plant parmi­giana. Desserts here are al­ways a stand­out too – per­fect tiramisu, silky panna cotta or sub­lime sweet ri­cotta can­noli. The wine list is wide, with some in­trigu­ing Ital­ians and lo­cal Ital­ian va­ri­etals, and a plethora of aper­i­tivi and di­ges­tives too.
