Recipes from A Chi­nese Street Food Odyssey by He­len & Lisa Tse

HE­LEN AND LISA TSE’S GRAND­MOTHER, Lily Kwok, came to Eng­land from Hong Kong in 1950, where she worked as a maid for a wealthy fam­ily. On her death, the fam­ily ma­tri­arch left Lily some money in her will, which she used to set up a restau­rant in Mid­dle­ton, near Manch­ester. With her twin sis­ter He­len and sis­ter Janet, chef Lisa is car­ry­ing on Lily’s legacy with their highly re­garded Manch­ester Chi­nese restau­rant Sweet Man­darin. For this, their third cook­book, the twins trav­elled the length and breadth of China, tast­ing the street food of the di­verse re­gions – they say they each gained 20kg in the process! He­len is the voice in the nar­ra­tive, while Lisa has written the recipes.
