HELEN AND LISA TSE’S GRANDMOTHER, Lily Kwok, came to England from Hong Kong in 1950, where she worked as a maid for a wealthy family. On her death, the family matriarch left Lily some money in her will, which she used to set up a restaurant in Middleton, near Manchester. With her twin sister Helen and sister Janet, chef Lisa is carrying on Lily’s legacy with their highly regarded Manchester Chinese restaurant Sweet Mandarin. For this, their third cookbook, the twins travelled the length and breadth of China, tasting the street food of the diverse regions – they say they each gained 20kg in the process! Helen is the voice in the narrative, while Lisa has written the recipes.
