SHRED­DED CHICKEN SALAD

Shred left­over Hainanese chicken with thinly sliced savoy cab­bage, grated car­rot, sliced spring onions and roughly chopped co­rian­der. If you have any left­over spring onion oil or chilli sauce mix to­gether and add fish sauce, lime or le­mon juice, su­gar and salt to taste. Toss the dressing with the veg­eta­bles and toss through crispy noo­dles at the last minute.
