The egg as a sym­bol of birth in­spired Kazuya Ya­mauchi’s dish “Dropped egg & the pulses of spring”. Tak­ing this theme a step fur­ther, he thought of chil­dren and his own child­hood. “I used to love help­ing my mother in the kitchen and I re­mem­ber drop­ping an egg on the floor, but my mother just smiled. It’s a won­der­ful mem­ory, and that’s why the plat­ing of my dish looks like an egg dropped on the floor.”
