Here’s a recipe that I got from Fer­gus Gar­rett, head gar­dener at Great Dix­ter, who orig­i­nally got it from his Turkish mother, a great cook. Great for veg­e­tar­i­ans, the lit­tle spinach and feta pastries are rolled in an un­usual way, which makes for a very at­trac­tive dish. I also freeze the cooked greens and pars­ley mix­ture when we have a glut as it’s so handy to use through­out the year.
