GRILLED TOMATO & CAP­SICUM WITH SE­SAME DRESS­ING

SERVES 8 AS PART OF A MEAL / PREPA­RA­TION 15 MIN­UTES / COOK­ING 30 MIN­UTES

2 ta­ble­spoons sherry vine­gar or red wine vine­gar 4 ta­ble­spoons ex­tra vir­gin olive oil 1 tea­spoon cumin seeds, toasted, ground 2 ta­ble­spoons se­same seeds, toasted 4 cap­sicums (yel­low, red, or­ange or a mix) 1kg toma­toes, cut in half 1 cup basil leaves, torn Mix to­gether the vine­gar, oil, cumin and se­same seeds. Sea­son gen­er­ously with salt and freshly ground black pep­per. Set aside in a large bowl.

Re­move the seeds from the cap­sicums and cut into thick wedges. Heat a grill plate, add the cap­sicum wedges and cook un­til ten­der then re­move and add them to the dress­ing.

Put the tomato halves on the grill plate cut side down and cook briefly on each side. Add to the dress­ing. Toss care­fully, add torn basil leaves and serve on a plat­ter.
