GRILLED TOMATO & CAPSICUM WITH SESAME DRESSING
SERVES 8 AS PART OF A MEAL / PREPARATION 15 MINUTES / COOKING 30 MINUTES
2 tablespoons sherry vinegar or red wine vinegar 4 tablespoons extra virgin olive oil 1 teaspoon cumin seeds, toasted, ground 2 tablespoons sesame seeds, toasted 4 capsicums (yellow, red, orange or a mix) 1kg tomatoes, cut in half 1 cup basil leaves, torn Mix together the vinegar, oil, cumin and sesame seeds. Season generously with salt and freshly ground black pepper. Set aside in a large bowl.
Remove the seeds from the capsicums and cut into thick wedges. Heat a grill plate, add the capsicum wedges and cook until tender then remove and add them to the dressing.
Put the tomato halves on the grill plate cut side down and cook briefly on each side. Add to the dressing. Toss carefully, add torn basil leaves and serve on a platter.
