Ly­chee and Lemongrass Sake­tini

A sub­tle sweet taste of ly­chee and zing of lemongrass lift this sake ver­sion of a mar­tini to uniquely won­der­ful heights.

Ly­chee and lemongrass syrup syrup drained from a 550-gram

tin of ly­chee 1 stick of lemongrass, plus ex­tra

to gar­nish For the drink 4 ta­ble­spoons ly­chee and

lemongrass syrup 3 ta­ble­spoons Zenkuro Orig­i­nal Sake 2 ta­ble­spoons vodka ly­chee fruit, to gar­nish

Bash the lemongrass stick with a pes­tle or rolling pin to re­lease its flavour and add to a small saucepan with the drained ly­chee syrup. Heat gen­tly un­til sim­mer­ing. Let sim­mer for sev­eral min­utes. Leave to cool. Strain out the lemongrass.

Half fill a cock­tail shaker with ice and then add the ly­chee and lemongrass syrup, sake and vodka. Shake un­til the shaker is icy cold. Strain into a cold mar­tini glass. Thread a ly­chee fruit on a skewer to gar­nish. Makes 2
