My first choice in store-bought peas is the frozen baby va­ri­ety. Be­fore cook­ing put them in a sieve and rinse off icy crys­tals. This en­sures the ice doesn’t cool the cook­ing wa­ter. The peas will come to the boil more quickly, sav­ing on cook­ing fuel, the peas re­main brighter in colour, and you are not hang­ing on wait­ing for the peas to come to the boil.
