Kokako food and cof­fee com­pany scored a coup re­cently when Air New Zealand agreed to serve it’s Fair­trade cer­ti­fied banana bread on trans-tas­man and Pa­cific flights. The loaf is dairy free and made with or­ganic spelt flour, Fair­trade bananas and con­tains no preser­va­tives. The bananas Kokako use are sourced from small co­op­er­a­tive farms in El Guabo, Ecuador. Stephen Knapp, Fair­trade ANZ CEO, notes that it recog­nises the fact that con­sumers are ex­pect­ing more food to be eth­i­cally sourced. A re­cent Globes­can sur­vey found that 91% of Kiwi shop­pers be­lieve that com­pa­nies should pay farm­ers and work­ers fairly – this is more than the global av­er­age (of 85%).”
