Pump­kin seeds are a snack food that can be con­sumed ei­ther raw or roasted (salted or not) and used as an in­gre­di­ent in bread, ce­re­als, sal­ads and cakes. They are a rich nat­u­ral source of pro­teins, phy­tos­terols, polyun­sat­u­rated fatty acids, an­tiox­i­dant vi­ta­mins such as carotenoids and to­co­pherol and trace el­e­ments, such as the pre­vi­ously men­tioned zinc. Sci­en­tific stud­ies car­ried out on an­i­mals also sug­gest eat­ing pump­kin seeds can help im­prove in­sulin reg­u­la­tion and pre­vent di­a­betic com­pli­ca­tions.
