We all know the clas­sic Christ­mas carol fea­tur­ing the figgy pud­ding, but what ex­actly is the dish we so en­thu­si­as­ti­cally sing about? Most peo­ple pre­sume it’s a nick­name for a tra­di­tional Christ­mas steamed pud but in fact it’s sim­i­lar to bread pud­ding. It fea­tures figs, of course, along with bread­crumbs, nut­meg, cin­na­mon, milk and a variety of other in­gre­di­ents, de­pend­ing on whose recipe you’re us­ing. Af­ter it’s baked, it is topped with a cognac or brandy sauce.
