While of­ten re­ferred to as ‘seed tapi­oca’, sago is dif­fer­ent to reg­u­lar tapi­oca – and the two can’t be sub­sti­tuted for each other. Dar­i­ole moulds are made of stain­less steel or aluminium; you could use souf­flé moulds in­stead, as long as you can fit 4 in the slow cooker.
