This sum­mer’s must-have drink

W hile hot mulled drinks are a pop­u­lar op­tion in the chilly North­ern Hemi­sphere at this time of year, in our part of the world we pre­fer to toast the fes­tiv­i­ties with some­thing more be­fit­ting our sunny cli­mate. So why not en­joy the best of both worlds by whip­ping up this sum­mer’s must-have tip­ple – chilled mulled cider?

Sim­ply com­bine in a saucepan 1 litre of your favourite flavoured cider with 1 cup of gin­ger tea. Add ½ cup dark rum and 1 ta­ble­spoon brown sugar and stir over a low heat to dis­solve the sugar. Seg­ment

1 or­ange, and add to the pan with 5 whole cloves, 2 bro­ken cin­na­mon sticks and 2 bruised car­damom pods; slowly bring to the boil. Re­move from the heat and al­low to cool com­pletely be­fore chill­ing the drink overnight.

Those who are look­ing for a non-al­co­holic version needn’t miss out; you can re­place the cider and rum with your favourite fruit juice.
