SPICED CRANBERRY SAUCE PREP + COOK TIME 15 mins MAKES 2 cups
2 cups fresh or frozen cranberries ¼ cup Cointreau or other orange-flavoured liqueur 350ml store-bought spicy plum sauce ¼ cup sugar
1 Place all the ingredients in a medium-sized saucepan.
2 Simmer gently for approximately 15 minutes, or until the mixture is reduced with a thick, syrupy consistency and the cranberries have begun to collapse.
3 Set the sauce aside until required. Can be served warm or cold.
