GIN­GER ALE & CITRUS PUNCH

125g straw­ber­ries, thinly sliced 1 or­ange, halved, thinly sliced 1 lime, thinly sliced 700ml Pimm’s No. 1 ½ cu­cum­ber 1.25 litre gin­ger ale, chilled 1 cup mint leaves

1 Place straw­ber­ries, or­ange and lime in a large serv­ing jug. Add Pimm’s; stir to com­bine. Cover and re­frig­er­ate for 3 hours or overnight.

2 Just be­fore serv­ing, cut cu­cum­ber into rib­bons; add to jug. Stir in gin­ger ale and mint. Serve over ice.
