● 2 eggs

● 20ml cream

● 4 slices brioche bread

● 6 slices streaky bacon, cooked

● 1 banana, sliced

● 1 tablespoon brown sugar

● 1 handful fresh strawberries, sliced ● maple syrup ● pistachio soil (optional) ● mint, to garnish

1 Whisk the eggs and cream together in a bowl. Cut the slices of brioche on a diagonal and dip into the egg mix. Set aside. 2 In a hot frying pan, fry the bacon. Cook the sliced banana and brown sugar together to caramelise the banana. Then cook the brioche until golden in colour and cooked. 3 Assemble all together on a plate, nicely layering the banana and bacon through the brioche. Stack strawberries over top. Serve with maple syrup and pistachio soil, if you wish (made by roasting then processing pistachio nuts). Finish with a garnish of mint.
