SALT CAFÉ FRENCH BRULÉE

SERVES 2

● 2 eggs

● 20ml cream

● 4 slices brioche bread

● 6 slices streaky ba­con, cooked

● 1 ba­nana, sliced

● 1 ta­ble­spoon brown sugar

● 1 hand­ful fresh straw­ber­ries, sliced ● maple syrup ● pis­ta­chio soil (op­tional) ● mint, to gar­nish

1 Whisk the eggs and cream to­gether in a bowl. Cut the slices of brioche on a di­ag­o­nal and dip into the egg mix. Set aside. 2 In a hot fry­ing pan, fry the ba­con. Cook the sliced ba­nana and brown sugar to­gether to caramelise the ba­nana. Then cook the brioche un­til golden in colour and cooked. 3 As­sem­ble all to­gether on a plate, nicely lay­er­ing the ba­nana and ba­con through the brioche. Stack straw­ber­ries over top. Serve with maple syrup and pis­ta­chio soil, if you wish (made by roast­ing then pro­cess­ing pis­ta­chio nuts). Fin­ish with a gar­nish of mint.
