You can use large boc­concini in­stead of buf­falo moz­zarella, if pre­ferred. This recipe can be made, to the end of step 4, sev­eral hours ahead. Keep the bases stored in air­tight con­tain­ers and the tomato mix­ture cov­ered in the fridge.
