Risotto does not re­quire the rice to be rinsed be­fore you be­gin to cook, as the starch is essen­tial to the dish. The ini­tial toast­ing of the rice loosens the starch in each grain, then as liq­uid is added and al­most constantly stirred in, more starch is re­leased.
