Pizza cheese is typ­i­cally a mix of ched­dar, parme­san and moz­zarella, which cre­ates that ap­petis­ing ‘stretch’. Use your own mix of cheeses, if pre­ferred. You can use any Mediter­ranean veg­etable here; try roasted red pep­pers or stuffed olives. You could also pur­chase a pre­mixed an­tipasto salad from the deli sec­tion of the su­per­mar­ket.
