Michael Mered­ith (above) is one of the coun­try’s best chefs, and his epony­mous restau­rant con­tin­ues to go from strength to strength. It’s an in­ti­mate space, with touches of plant green­ery break­ing up the monochro­matic scheme. You can opt for a five-, eight- or nine-course de­gus­ta­tion and the art­ful pro­gres­sion of each per­fectly con­sid­ered plate is im­pres­sive. Sal­mon comes with a del­i­cate sheet of com­pressed ap­ple, off­set by a fei­joa and wasabi puree that zings off the plate. Thin rolls of ox tongue hold cele­riac puree, and sit in a won­der­fully savoury ba­con broth. The ster­ling wine list is com­posed by Mas­ter Som­me­lier Cameron Dou­glas.
