Dark wood, leather and an ex­pan­sive raw bar set the scene for this tem­ple to the plea­sures of good meat and seafood. Un­der the di­rec­tion of chef Sean Con­nolly, dishes let the top-notch in­gre­di­ents shine – it’s es­sen­tially sim­ple food, though there’s plenty of tech­nique un­der­scor­ing it. The butcher’s block of­fer­ing en­com­passes a wide range of cuts from both pas­ture­and grain-fed beasts, but pescatar­i­ans will also find much to en­joy here, in­clud­ing fat, juicy Queens­land prawns with Pernod but­ter, or an el­e­gant dish of poached gurnard with crab bisque and scal­lops. There’s lots of good name-check­ing go­ing on – that gurnard comes from Leigh Fish­eries; but­ter is Lewis Road; Neat Meat sources much of the pro­tein. The wine list, mean­while, is top-notch, and ser­vice is friendly and in­formed.
