The Bistro is a wel­com­ing, fam­ily-ori­ented restau­rant in the heart of Taupo. Chef-owner Jude Mes­sen­ger, whose cre­den­tials in­clude time in the kitchen at Huka Lodge and a stint at Peter Gor­don’s The Sugar Club in Lon­don, has great re­spect for in­gre­di­ents and seasonality. His tight, fre­quently chang­ing menu fea­tures the likes of ten­der, melt-in-the-mouth sous-vide cala­mari with lightly spongy hand­made gnoc­chi, fried ca­pers and a del­i­cately creamy Cham­pagne veloute, and sword­fish with ch­est­nut puree, Ital­ian pars­ley, orange wedges and sliv­ered al­monds. Desserts are a high­light too – think orange and cran­berry sor­bet with pome­gran­ate mo­lasses, or a sim­ple and per­fect lemon meringue tart.
