Set within the el­e­gant grounds of Craggy Range, Ter­rôir has an invit­ing French-coun­try kind of charm – stone floor, roar­ing fire, can­de­labras, herbs in ter­ra­cotta pots on each ta­ble. The am­bi­ence matches the flavour­some French bistrolean­ing dishes that cel­e­brate fresh Hawke’s Bay pro­duce. A beau­ti­fully cooked black sesame-crusted con­fit of sal­mon is joined by crunchy cele­riac re­moulade, ver­juice, ap­ple puree and olive oil pearls, while an au­tum­nal dessert of grilled figs is topped with a quenelle of wild thyme and honey ice cream, the honey col­lected from Craggy Range’s own hives.
