This spiced muesli will keep in an airtight container in the fridge for up to three months. If you can’t find fresh figs, replace with stone fruit or berries.
1 1/3 cups rolled rye
1 1/3 cups wheat bran flakes
1 1/3 cups rolled oats
1/3 cup pepitas (pumpkin seeds)
1/3 cup walnuts, toasted
1 cup dried figs, halved 1 cup raisins
1 tsp mixed spice
2 tsp ground ginger 1 cup skim milk
2 fresh figs, quartered
PREHEAT oven to 180⁰C.
1. Placed rolled rye on a baking tray. Bake for about 10 mins, or until crisp. Cool.
2. In a large bowl, combine rye, wheat bran flakes, rolled oats, pepitas, walnuts, dried figs, raisins, mixed spice and ginger.
3. To serve, place muesli in bowls; add milk and fresh figs.
