Gin­ger­bread-spiced muesli

This spiced muesli will keep in an air­tight con­tainer in the fridge for up to three months. If you can’t find fresh figs, re­place with stone fruit or berries.

1 1/3 cups rolled rye

1 1/3 cups wheat bran flakes

1 1/3 cups rolled oats

1/3 cup pepi­tas (pump­kin seeds)

1/3 cup wal­nuts, toasted

1 cup dried figs, halved 1 cup raisins

1 tsp mixed spice

2 tsp ground gin­ger 1 cup skim milk

2 fresh figs, quar­tered

PRE­HEAT oven to 180⁰C.

1. Placed rolled rye on a bak­ing tray. Bake for about 10 mins, or un­til crisp. Cool.

2. In a large bowl, com­bine rye, wheat bran flakes, rolled oats, pepi­tas, wal­nuts, dried figs, raisins, mixed spice and gin­ger.

3. To serve, place muesli in bowls; add milk and fresh figs.
