Chia seed por­ridge

This is the best brekkie for kids but could be a great snack too!

½ cup rolled oats

1½ tbsp chia seeds

1½ cups boil­ing wa­ter

1 tbsp LSA

2 tbsp threaded co­conut

2 tbsp dried apri­cots (chopped) 2 tbsp dried cran­ber­ries

1/2 cup of milk, al­mond milk or cream 1 ba­nana (could add fresh berries in

sum­mer)

2 tbsp runny honey

1. In a mi­crowave-safe bowl soak the oats and chia seeds in boil­ing wa­ter for 30 min­utes. Wa­ter should be sit­ting around a thumb­nail above oats and chia.

2. When all wa­ter has been ab­sorbed, cook in mi­crowave for 2 min­utes.

3. Add LSA, co­conut and dried fruit and mix un­til com­bined.

4. Add to serv­ing bowls and pour over milk or cream, add sliced ba­nana then driz­zle over runny honey.
