Chia seed porridge
This is the best brekkie for kids but could be a great snack too!
½ cup rolled oats
1½ tbsp chia seeds
1½ cups boiling water
1 tbsp LSA
2 tbsp threaded coconut
2 tbsp dried apricots (chopped) 2 tbsp dried cranberries
1/2 cup of milk, almond milk or cream 1 banana (could add fresh berries in
2 tbsp runny honey
1. In a microwave-safe bowl soak the oats and chia seeds in boiling water for 30 minutes. Water should be sitting around a thumbnail above oats and chia.
2. When all water has been absorbed, cook in microwave for 2 minutes.
3. Add LSA, coconut and dried fruit and mix until combined.
4. Add to serving bowls and pour over milk or cream, add sliced banana then drizzle over runny honey.
