When raw, the peel is bit­ter and chewy, but tastes en­tirely dif­fer­ent when cooked. The best way to use it is to make ba­nana peel tea, which tastes far sweeter than you might imag­ine. TOP TIP Chop the ends off a ba­nana and dis­card. Halve the fruit length­ways – still with the skin on – then cover in boil­ing wa­ter. Bring back to the boil and sim­mer for 5 min­utes. Pour into a cup and sprin­kle some cin­na­mon on top.
