BOOST PROTEIN WITH PORK SKIN
Pork scratchings are rarely thought of as a health food, but pork
rind is rich in protein – good for muscle health. Also, much of the fat is unsaturated oleic acid – similar to olive oil – or stearic
acid, a type of saturated fat that doesn’t raise cholesterol.
TOP TIP: Make some scratchings by cutting the rind into strips using sturdy scissors, sprinkling with salt then
roasting in a preheated oven at 220°C for 25 minutes.
