Pork scratch­ings are rarely thought of as a health food, but pork

rind is rich in pro­tein – good for mus­cle health. Also, much of the fat is un­sat­u­rated oleic acid – sim­i­lar to olive oil – or stearic

acid, a type of sat­u­rated fat that doesn’t raise choles­terol.

TOP TIP: Make some scratch­ings by cut­ting the rind into strips us­ing sturdy scis­sors, sprin­kling with salt then

roast­ing in a pre­heated oven at 220°C for 25 min­utes.
