A com­mon food ad­di­tive, glutamate is found in sauces, sausages and chips, and is also found in MSG. A com­bi­na­tion of salty and sweet, glutamate is con­sid­ered the all-pur­pose choice among flavour en­hancers. Stud­ies show that glutamate, es­pe­cially as used in MSG, can help lower the con­cen­tra­tion of lep­tin, the ‘slim­ming hor­mone’, mean­ing it’s harder to feel sat­is­fied while eat­ing.
