New re­search has found

an­other rea­son to love legumes. A study pub­lished in the Jour­nal of Nu­tri­tion has shown that eat­ing half a serv­ing of pota­toes or rice and half a serv­ing of lentils con­trib­utes to a de­crease in blood glu­cose lev­els, com­pared to eat­ing a full serv­ing of rice or pota­toes. The study, led by the Univer­sity of Guelph in Canada, found that re­plac­ing rice with lentils led to a 20 per cent re­duc­tion in blood glu­cose lev­els, and re­plac­ing pota­toes de­creased the level by 35 per cent.
