Av­o­cado and gin­ger dip

2 avo­ca­dos

4 tbsp sour cream

3 tbsp le­mon juice

2 tbsp olive oil

1 piece gin­ger (ap­prox 3cm)

Pinch of salt and pep­per

1 Cut the avo­ca­dos in half, re­move the stone, and scrape out the flesh with a spoon.

2 Mix the av­o­cado with the sour cream, le­mon juice and oil, then purée to your de­sired con­sis­tency – chunky or thin. 3 Peel, then finely grate the gin­ger. Care­fully mix into the dip. Sea­son to taste

with salt and pep­per.
