Cracked Burghul Wheat and Cab­bage Salad


5 tbsp olive oil 1 large onion, diced 1/ head cab­bage, sliced into long, 2 thin slices 1/ tsp sea salt

2 1/ -1 tsp pa­prika or chilli pow­der, 2 to taste 4 tbsp cracked/dried burghul wheat 1/ cup wa­ter

4 2 tbsp flat-leaf pars­ley, roughly

chopped heat a large sauté pan with olive oil over a medium heat. add the onion and fry gen­tly for 5 min­utes. add the cab­bage and stir for 1 minute. add salt, spice and cracked wheat and stir to com­bine. add the wa­ter and mix the in­gre­di­ents well. cover with a tight fit­ting lid and sim­mer on a low-medium heat for 10-15 min­utes. the wheat should be moist and lightly chewy. toss through the pars­ley and serve.
