Cracked Burghul Wheat and Cabbage Salad
5 tbsp olive oil 1 large onion, diced 1/ head cabbage, sliced into long, 2 thin slices 1/ tsp sea salt
2 1/ -1 tsp paprika or chilli powder, 2 to taste 4 tbsp cracked/dried burghul wheat 1/ cup water
4 2 tbsp flat-leaf parsley, roughly
chopped heat a large sauté pan with olive oil over a medium heat. add the onion and fry gently for 5 minutes. add the cabbage and stir for 1 minute. add salt, spice and cracked wheat and stir to combine. add the water and mix the ingredients well. cover with a tight fitting lid and simmer on a low-medium heat for 10-15 minutes. the wheat should be moist and lightly chewy. toss through the parsley and serve.
